Olives in a medium-small size, with a salty, aromatic, concentrated flavour. Although they are smaller, they have the same full flavour as the larger olives and are just as good as an appetiser, in salads or in cooked dishes.

How to use it

  • Put them in a sandwich, on bread and cheese, or alongside a quick snack.
  • Chop them into salads, onto pizza or into pasta.
  • Add them to sauces, stews and tapenades.
  • Marinate them with olive oil, garlic and aromatic herbs.

Storage

After opening, keep the olives in the fridge and, if they are in brine or oil, keep them covered with their liquid.

Opened olives and sauces keep best in the fridge. Pastes (pepper, tomato, sesame) store well somewhere cool and dark — a thin layer of oil on top helps once the jar is open.
