How to brew chamomile tea properly
Three small mistakes and one simple rule that changes everything.
Chamomile is a gentle plant. And precisely because of that, we treat it wrong: we boil it, we forget it under a lid for ten minutes, we squeeze it too hard. The result: a bitter liquid that has nothing to do with what an evening tea should be.
The simple rule: 1 teaspoon of whole flowers per 200 ml of hot, not boiling, water (around 90°C). Cover the cup for 4-5 minutes, no longer. Strain without pressing the flowers.
If you want to go further, try a blend of 70% chamomile, 20% lavender and 10% lemon balm. For long evenings, but not difficult ones.
